I think your best bet for UFC thing would be either zone 810 or (maybe) Granfalloon if you stay on the Plaza. As for transport to Arrowhead, I think Granfalloon used to do a breakfast on Sunday morning, and they had a bus that would then get people to Arrowhead after eating, etc. It was a few years ago. They can still do something like that, even if I'm not sure. A good bet would be to ask the front desk of your hotel lobby.

Not sure on the issue of Kansas City, but just wanted to mention the UFC tomorrow (November 14th) will be live on SpikeTV (from 20 hours to the east, should be 7:00 p.m. Central), and not on PayPerView. So you only need to find a place with the SpikeTV cable, which should not be too hard.
